Burning: Burning of casks is carried out with fire logs made from oak.
The wood is from the same geographical from that used in the manufacture of our barrels origin. Drying is exclusively outdoors getting submitted for a minimum of 4.5 years of aging.
Alternatively, the Cooperage JM Gonçalves offers you various auxiliary equipment manufactured in stainless steel.
Fermentation vats and Aging
Capacity from 5 to 60 hl All vats and barrels are custom manufactured by our section of large volumes, respecting all regulations and requirements of our customers.

The burning is done with logs of wood subjected to prolonged treatment. Hot flushes are scaled proportionally with the size of the vat.
